Chihuahua cheese is a Mexican cheese that originated in the Chihuahua region of Northern Mexico. It is a cow's milk cheese with a flavor that resembles cheddar, and it is salty, mild and slightly sour. Chihuahua cheese holds together well when it melts, and is great for fondues, breaded and fried or egg dishes, enchiladas or for simple snacking.
