fresh yeast; cake yeast

what is it?

Professional bakers have traditionally liked this type of yeast because it's what they learned to bake with, but many of them are now switching to instant yeast because of its extended shelf life and ease of use. Not as widely available as other yeast products, fresh yeast is sold refrigerated in foil-wrapped blocks and cubes.

When substituting instant yeast for fresh, use one-third the amount called for; that is, for every ounce of fresh yeast, use 1/3 ounce of instant.

Double check the expiration date before buying or using.

how to store:

Refrigerate fresh yeast. Even refrigerated, it has a limited shelf life of about three weeks.
