If you don't have time to prepare the live lobsters yourself for New England Lobster Rolls, frozen lobster meat makes a surprisingly good substitute for fresh. We like Cozy Harbor Maine Lobster (cozyharbor.com) for its tender claw and knuckle meat, which is flashfrozen at sea. Just be prepared to pay for the convenience-a 7-oz. package costs about $16, and you'll need at least two to make the lobster rolls.
