methi (in Hindi), kasuri methi (dried leaves)

what is it?

A grassy, slightly bitter herb used in Indian cuisine (the seeds are also used). Fenugreek leaves are available both dried and fresh. Fresh leaves are treated as cooking greens. The dried leaves are used to flavor vegetable dishes and curries.

how to store:

Fresh leaves wrapped in dry paper towels in a zip-top bag will keep for about two weeks in the refrigerator. Store dried leaves in a sealed jar in a cool, dark cupboard; use within four months.
