Malt vinegar is a dark, flavorful vinegar that's made by malting barley, making the barley into beer, and then turning that beer into vinegar.

Its bold, unique flavor makes it a great condiment—it's classic on french fries or fish and chips—as well as a tasty addition to pickling mixtures. But the same distinct flavor that lends it to pickles and fries, makes malt vinegar a questionable choice for salad dressings and sauces. The malted taste has a tendency to overpower more delicate flavors.
