How to Keep Your Pasta Hot and Delicious

Video Length: 1:23
Produced by: Handmade TV and Sarah Breckenridge

On pasta night, Fine Cooking reader Lillian from Gainesville, FL, uses a simple, common-sense trick that helps solve two problems at once.

Since noodles tend to suck up the moisture in a sauce, drain the pasta over a heat-proof serving bowl in the sink. This reserves some of that hot, starchy pasta water to add back into the sauce if you need it AND warms up the serving bowl. Hot bowl meets hot pasta!

CalifGirl writes: Just before pasta is finished cooking, I use a 2-cup Pyrex measuring cup to scoop out reserve pasta water. I then lift the pasta out of the water using tongs or a large strainer spoon, and ladle directly into warm bowls. This method keeps a little bit of the pasta water with the noodles, ensuring a hot and smooth sauce. Posted: 5:35 am on October 23rd
