A New Way to Slice Apples

For recipes like Smoked Trout with Apple and Crème Fraîche, sweet, crisp apples are sliced into thin half-moons to act as a base for the fish. To get the right shape, stand the apples upright and cut thin slices straight down one side until you hit the core. Repeat on the other side, and then cut all but the smallest outside rounds in half.
