Cookware Designed for Compact Storage and Versatility

If you're short on storage space, The Strate Collection, from French cookware manufacturer Cristel, is made with you in mind. Glass lids are flat for stacking, and pots are graduated to fit inside each other. A long removable handle fits all the pots and lids and snaps on and off easily; removable heatproof serving handles click in place for bringing the attractive pots from stove to table.

Intrigued by these features, we put the 2- to 4-quart saucepans and an 11-inch skillet to the test. The 18/10 gauge stainlesssteel pans with a heat-defusing aluminum-core base wrapped around the bottom edge produced even cooking and good browning. The only downside we found was with the long removable handle: If left on during high-heat cooking, the release mechanism (near the attaching end of the handle) can get too hot to touch.

A set of three saucepans with lids, a removable handle, and two serving handles is about $500, but the quality and durability of the pieces justify the price. See kitchen-universe.com for a mail-order source.
