Like steak, salmon can be cooked to varying degrees of doneness, from rare to well done. Some recipes, such as the Miso-Glazed Wild Salmon with Sesame Asparagus and Sear-Roasted Wild Salmon with Leek & Artichoke Ragù, suggest cutting into the fish to gauge doneness; here's what salmon should look like at four different stages.
