When you need long, thin strips of zest, use the kind of zester with five sharpened holes on its metal head. To create curls of pith-free zest, press the head against the fruit's skin while pulling on the handle. Use the curls to decorate cakes, pies, or the Lemon Custard, Blueberry, and Shortbread Verrines from Fine Cooking #130. Some zesters come with a single bigger hole (seen above on the side). Drag it across the fruit to create thicker strips for candying or to garnish a drink.
