Lemon-ginger marmalade

This was very easy to make and quite delicious.  I made a half-batch and it yielded about 4 cups from three lemons.  The ginger is very strong, but in a good way.  My daughter said "It makes my tongue tickle!"  I think this will be excellent mixed with blueberries, or stirred into tea, as well as on toast.
