I vote for Abby Dodge’s version of the carrot cake. Both renditions have their charms, but it is pretty hard to beat a classic carrot cake. And what a carrot cake this is! It manages to be moist and sturdy at the same time. I liked that the frosting recipe made a large batch– I hate it when I have to skimp on frosting. Also, your frosting instructions were spot on– I’ll never skip the crumb coat again. I made a double batch of this cake for my birthday (today) so I could share it with co-workers and friends. The recipe doubled just fine.
