Poblanos stuffed with cheddar and ham

This was, in the words of my husband, yet another keeper from this issue.  I used ham instead of chicken, but I think this would be a great way to use up leftover turkey.  Sausage would be out of sight.  I made some using yellow bell pepper instead of poblano and this was equally delicious.  Our poblanos were not very spicy and this dish benefitted from a good squirt of hot sauce.
