This soup is seriously delicious, and even approved by the four-year-old. I used oven-roasted cauliflower, and scored some orange cauliflower, thus the lovely color of the soup. I did not save any florets for 'texture', as that does not go over big with the kiddo. The cheese was white cheddar! Speaking of cheese, I cut the amount of cheese way down-- this is soup, not cheese sauce after all. A big grind of black pepper and a few drops of hot sauce really made the soup.
I really like the Cooking from the Big Box feature-- at our house, cheese is the least of our overstock problems. How about a feature on those giant bags of dried fruit? I have at least 5 pounds of assorted raisins, craisins, and prunes-- and I already made fruitcake!
