Homemade Croissants - Classic

This was a great weekend project. Jeffrey Hamelman is correct, not too difficult, and a great workout. I used the 2-day method, made the dough on Sunday morning, step 2 Sunday night. Went to bed, started to relax and it took me a few seconds to realize why my shoulders were so sore!!!!! Woke up Monday morning to complete the recipe. The house still smelled great when I got home from work. My co-workers are very happy when they get to try all my creations. These are really beautiful. Mine got a little too brown on the bottoms, I would bake them on the short side of the recipe next time.
