Pork and Potato Hash with Poached Eggs and Avocado
comments (0) January 31st, 2009 in GalleryThis was another good use of the leftover Slow-Roasted Pork Shoulder and a nice change for a weekend breakfast. My Irishman was happy with the potatoes and I love poached eggs. I think the potatoes would be better roasted, with the addition of carmelized onions and some red bell peppers, for a little more flavor. I sprinkled a little New Mexican red chile powder over the top.
