Pork and Potato Hash with Poached Eggs and Avocado

OK - This was kind of weird for me. It just didn't seem like all of these ingredients would go together...but they did. It was delicious! I have never made poached eggs before, never even eaten them....but they turned out pretty good. I think I may have cooked the eggs just a little bit too hard, but I prefer that to too soft. My husband doesn't like eggs, so I served his as soft tacos - on flour tortillas with grated cheese. He loved it. Don't forget the red pepper. This is one spice I usually only use on pizza, but this challenge has taught me that it adds a lot to other dishes as well.
