Roasted Potato and Mushroom Salad with Mascarpone

Made as part of of the "Any Night's All Right" menu. This was by far our favorite dish, but I love pretty much anything with mascarpone. I'm not a fan of mushrooms but they add a nice flavor to this dish. I used German buttercream potatoes.
