Pectin for Marmalade

Ball fruit jell pectin.

Ball fruit jell pectin.

By Fine Cooking Editors, editor

January 12th, 2009

Powdered pectin shortens the cooking time and eliminates the guesswork involved in gauging the correct consistency of marmalade (see "Preserving the Season: Lemons", issue #97, p. 19). If you can't find pectin at your local supermarket or hardware store (it'll be with the canning supplies), ykou can order Ball fruit gell pectin from Canning Pantry. A 1.75-oz. box costs $2.29. This product can also be purchased by the case (24 boxes).
