Roasted Potato & Mushroom Salad with Mascarpone

This recipe was yet another winner-- I already love roasted potatoes, so potatoes combined with succulent mushrooms and covered in a creamy dressing makes a truly great thing.  Edited to add that upon completion of the challenge, my family decided that this was one of the five best recipes we made.
