Pork shoulder is my most favorite cut of meat. All it needs is some salt and pepper and low and slow cooking and it's delicious. I didn't salt the roast overnight, although I wish I would have. I also started it later than I wanted. It wasn't as pull-apart tender as I would have liked, but it was still really good.
