Red-Cooked Tofu (issue #97, p. 89) calls for dry sherry or Shaoxing, a Chinese cooking wine. If you choose to use the latter, you can purchase it from Kalustyan's (to find this product, go to the site and search for "Shaoxing"). For 640 ml, you'll pay $14.99.
