This is my last post. It's very bittersweet to have finished cooking the issue. I'll miss the camaderie and exchange of ideas but am looking forward to getting to the stack of recipes I want to try soon. Thank you everyone for all the great ideas and hints. It looks like about a dozen of us will actually cook the whole issue. I've learned a LOT and found some great new techniques. If you do this again, Fine Cooking, you might work on a bit more balance in the issue. More salads, vegetables, sides... Fewer desserts - although I'm amazed that I lost 6 lbs while doing the challenge! Ok, carrot cake comments... This is a wonderful recipe for a classic carrot cake. We were in the midst of cleaning out the pantry when I made this. I couldn't find the raisins but could find the dried cranberries. So, once again, I substituted. We loved the substitution. I only made one layer in the interest of not having leftovers around. This is a recipe I'd make again.
