Creamy Vegetable Soups: Carrot-Ginger

This was the first recipe from the challenge that I would call just okay, even when pepped up with a garnish of chili powder.  I overdid it with the ginger a bit, plus between all the carrot cakes and drinking up the excess carrot juice, plus the fact that carrots are my kids favorite (and sometimes only tolerated vegetable)... well, let's just say that I am a little over-carroted right now.   After so many iterations of this soup recipe, which I really love, I have also concluded that the vegetables have to be very flavorful on their own (like broccoli), or they will really benefit from the flavor boost of roasting (like mushrooms, or the cauliflower in the cauliflower-cheddar soup, which fits right in with this recipe).  This soup formula, or algorithm, is going to get a lot of use this summer, when the produce starts rolling in with my CSA box, but for Chicago in winter, boosting flavor is key.
