Lemon-Ginger Marmalade

This was a very labor-intensive endeavor, due to the work involved with peeling and cutting the rind, but so worth it. I made a bunch of small jars and gave them out to friends, neighbors and co-workers. Everyone loved it. I loved it and wanted to eat it by the spoonful. I used Meyer lemons.
