Fresh Technique: Fish Baked in Paper

Video Length: 5:32
Produced by: Gary Junken

Offer someone "steamed fish" and you might get a shrug. But snapper en papillote? Now you've got some takers. Steaming fish in a parchment packet is one of the easiest ways to put a fresh, healthy dinner on the table fast—and with very little cleanup afterwards. The only trick to it is learning how to fold the fish into a packet to trap the steam and infuse it with the aroma of your herbs and seasonings. Web editor Sarah Breckenridge shows you how to do it in this video.
