Menu Timeline

In the morning (or up to one day in advance).

  • Make the coconut meringues
  • Make the soup, but don’t add the cream; refrigerate.
  • Make the raita for the soup and refrigerate.

One hour before dinner

  • Rinse and drain the rice.
  • Prep the ingredients for the stir-fried cauliflower.
  • Begin steaming the rice.
  • Chop the onion, carrot and herbs for the coconut-curry sauce, and measure out the other ingredients.
  • Make the fruit salad

Fifteen minutes before dinner:

  • Gently reheat the soup with the cream.
  • Stir-fry the cauliflower and peas.
  • Serve the soup as the first course with the raita.

After serving the soup:

  • Sear the sea scallops and make their pan sauce. Serve with the rice and the vegetable stir-fry.
