A Spicy Valentine's Day Dinner

Truffles and oysters not your style? For some there's nothing sexier than spicy. This menu of Thai and Indian flavors is full of aromatic spices, and just enough heat to keep things interesting. End the night on an exotic note with a passionfruit & citrus salad and crisp coconut meringues.

Menu Timeline

In the morning (or up to one day in advance).

Make the coconut meringues
Make the soup, but don't add the cream; refrigerate.
Make the raita for the soup and refrigerate.

One hour before dinner

Rinse and drain the rice.
Prep the ingredients for the stir-fried cauliflower.
Begin steaming the rice.
Chop the onion, carrot and herbs for the coconut-curry sauce, and measure out the other ingredients.
Make the fruit salad

Fifteen minutes before dinner:

Gently reheat the soup with the cream.
Stir-fry the cauliflower and peas.
Serve the soup as the first course with the raita.

After serving the soup:

Sear the sea scallops and make their pan sauce. Serve with the rice and the vegetable stir-fry.
