Re:Latin-Style Flank Steak

Great new recipe to try for a dinner party. I have to agree with others about the cumin, though -- *way* too much. I already cut the cumin by 40%, but will cut it by 60% next time. I decided to make a wet rub instead, adding lime juice and date sugar, and marinated it for 3 days. *Loved* the chipotle butter!! Will definitely make again.

Re:Recipe: Seared Scallops with Herb-Butter Pan Sauce

Outstanding! My husband, who doesn't always love leftovers, said he'd eat this dish again for the next *two* meals in a row! Fresh herbs were hard to come by yesterday, so I used a refrigerated mixed herb paste that I found in the produce section of the grocery store and the results were awesome. This will become a new staple for us!!

Re:Roasted Salmon with Shallot-Grapefruit Sauce

Awesome -- the sauce was really delicious! I recommend pan-searing the salmon, however, to avoid over-cooking. 2-3 minutes per side, depending on thickness, for medium-rare. We will definitely make this again!
