Re:Chocolate-Covered Sandwich Cookies with Dulce de Leche (Alfajores)

I have made my own dulce de leche filling many times by boiling the cans of sweetened condensed milk, so my rating is based solely on the cookie part of this recipe. The dough is easy to work with, but I think lacks a bit of flavor. I have made the recipe three times now for a cookie swap and it definately tastes better with pure vanilla extract added and perhaps the addition of more sugar? Also, for my own personal preference, I think the flavor of the whole wheat flour is a bit overpowering. I am going to try the recipe using all regular flour at some point. Overall though, an outstanding, different and memorable cookie!

Re:Bow Tie Cookies with Apricot Preserves

This recipe was good, although, not spectacular to me. The dough was easy to work with, although it needed some more flavor to it. I made a second recipe with the addition of vanilla and a pinch of salt...makes all the difference. I also made my own Italian Fig Filling instead of using the apricot preserves and glazed the finished cookies with an orange and vanilla icing. Turned out great with these changes.

These bars are delicious!! Turned out absolutely perfectly. I lined the pan using Reynolds Release Foil for ease in slicing and cleanup. I baked them for 35 minutes - they were perfect. Excellent, highly recommended recipe!

Re:Chocolate Espresso Pecan Pie

Excellent, I needed to save time and used a deep dish pie shell. The filling ran over on me a bit, the only reason for the 4 stars. Overall taste is very good, but I think I prefer traditional pecan pie better.
