Re:Chicken with Tarragon & Vermouth

Delicious and easy. I used chicken tenders and sauted them whole. I also substituted green onions for the shallots. Tarragon and vermouth pair up so nicely. I served it with jasmine rice and a salad. A great weeknight meal ready in less than 30 minutes.

This is an excellent, quick stir-fry. My husband requests this dish quite often. The only change I make is to dissolve a 1/2 tsp cornstarch to the water, as I like my sauce to be a little thicker. I serve it with brown basmati rice.

This is a great way to serve basmati rice. I usually do not have fresh mint around so I omit it. I also cut the amount of salt back to 1 teaspoon. For a different variation, use 5-6 star anise instead of the cinnamon sticks. Delicious!
