Be sure you have a very thick piece of salmon! We loved the fennel-apple salad; to us that was what "made" the dish.

Most of my fish recipes are "summery" and this is a good "wintery" one. I used very thick cod filets. And I cut down a little on the butter. Very nice with pinot noir.

Re:Grilled Goat Cheese Crostini with a Tangle of Marinated Roasted Peppers

These got rave reviews. I was a little disappointed that the balsamic vinegar turned the pretty roasted peppers a drab brown, so I sprinkled a tiny bit of parsley on top to brighten them a little. They were gobbled up.
