The sweet and savory tastes of this dish sparkle. If the pine nuts are too pricey for you, I think you could use half pine nuts and half walnuts, although my husband disagrees. The texture of the cherry tomato skins is the only downside to this recipe, but maybe the tomatoes we used had particularly tough skins.

Re:Potato, Asparagus & Fennel Ragoût

This is a light and flavorful dish, and is also quick and inexpensive. I followed the reviewer's advice and added the asparagus tips after 5 minutes of the ten minute simmer. I didn't have fresh dill, so I also added freeze-dried dill when I added the asparagus tips. The ragout, along with a good bread, makes an excellent weeknight supper.
