Re:Cumin and Cracked-Pepper Filet Mignon with Brie Butter

The flavor was not what I was looking for with this dish. If you are looking for protein with a cumin rub that the Tuna with Jalapeno sauce from Fine Cooking is a much better option. The Brie butter also did not come together every well for me. Pretty disappointed in this one since the pictures looked so good.

Re:Roasted Celery and Garlic Soup with Crisp Prosciutto

The soup had excellent flavor but I found it made quite a bit less than the amount listed in the recipe. Also, the amount of prosciutto appears to be off in the recipe. 1 ounce seems about right but it is way less than 3/4 of a cup. I think the right measurement is probably 1/4 cup.

Great recipe but I agree with the earlier poster on the attachment mistake. Don't use the wire whisk for churning the butter. Use the paddle attachment and save the whisk for beating the egg whites.

This one is definitely a keeper. I added a couple of diced jalapenos for an extra kick and served it over mashed potatoes. The southwestern flavors would be perfect over any cut of beef.

This dish was very good. It is lot thicker than a traditional queso dip. If you want a thinner / more traditional queso dip then I would recommend adding additional cheese or cream to lighten it up.

Re:Quick Tandoori Chicken Thighs

I was surprised to find this to be pretty bland. The chicken didn't seem to retain much of the flavor. Fine Cooking has another Chicken Tandoori recipe that is much better. I think it utilized skinless thighs which may allow the chicken to absorb more of the marinade.

The flavors in the dish are fantastic. We made the dish exactly as stated in the recipe but I will use boneless thighs next time. I think this would also be good in slow cooker.
