Re:Beef & Wild Rice Soup with Winter Vegetables

I have been making this soup since I found it last year and it is a winner. Everyone loves it and I am making it again tonight. It is great with a salad and either fresh French bread or a good Ciabatta (sp.) bread. I also add more meat to the recipe. Another hint is to get the butternut squash already cut up at Costco. Makes it a lot easier!

Re:Wild Rice with Dried Cranberries & Hazelnuts

This was delightful and easy to prepare. Served it with ham that had a chutney glaze and spinach salad. Can't wait to make it again. The rice took at least 60 min. if not a little longer.

Re:Classic Basil Pesto

I first made this Pesto after seeing it in the June/JULY 2010 issue and loved it. It is easy to make and I made it all summer long with my home grown basil. Now I'm at it again! It is a great gift to take to friends who enjoyed it also. I have found it delicious on a chicken ravioli that I purchase at Costco.

I prepared this last evening and it was fabulous. I did top it with whipped cream! I do agree with another reveiwer that you may want to lower the temp. to 350 after the 15 minutes. I noticed the outside edges getting too dark during the cooking process but let it go as this was my first "clafoutis." It won't be my last I can assure you!Everyone loved it and it was so easy.
