Re:Fennel & Orange Salad with Red Onion & Olives

This was a pleasant surprise. All my guests enjoyed this salad and were surprised at the ingredients...especially the fennel. "What's fennel?", the men asked. Because it served 6 and I had 8 guests, I added just a little spring mix which added a little color and helped to fill out the plate. Very good. I also used Kalamatas olives as I could not find "dry cured olives".

Re:Scallop & Mushroom Rosemary Kebabs

OMG! The first bite sent all my guests into food heaven.What is in this? This is so good! I love the delicate flavor of the rosemary Etc, etc. Even the men were oohing and aahing. This was the first course of my six course dinner. PERFECT.You can make the breadcrumb mixture AND the creme fraiche in the morning, along with preparing the rosemary spears.I would highly recommend this recipe.

Re:Prosciutto-Wrapped Mozzarella & Basil

EXCELLENT! Husband gave it a thumbs up.Suggestions: I bought the marinated mozzarella by mistake but this worked out well. Gave it a nice flavor.I used the grape tomatoes however the mozzarella balls actually fit better with the cherry tomatoes. The grape tomatoes were a little small.This makes more than 8 servings. You can get about 20 to 24 "balls" out of this recipe depending on how you cut the proscuitto. I ran out of tomatoes before I ran out of Proscuitto or mozzarella or basil.

AFTER SPENDING AN AFTERNOON MAKING THIS SOUP...ALTHOUGH IT'S NOT HARD BUT A LITTLE TIME CONSUMMING...I FOUND IT NOT PARTICULAR TO MY LIKING. EVEN THOUGH I REALLY LIKE GINGER THIS HAS WAY TOO MUCH . A TEASPOON WOULD BE BETTER THAN A TABLESPOON. THE DEPTH OF FLAVOR IS LOST WITH TOO MUCH GINGER. I WILL MAKE ANOTHER BATCH WITHOUT THE GINGER AND ADD IT TO THIS BATCH TO LEVEL OUT THE FLAVOR...BUT I WILL NOT SERVE IT FOR MY NEW YEARS EVE DINNER FOR 8.
