Just before pasta is finished cooking, I use a 2-cup Pyrex measuring cup to scoop out reserve pasta water. I then lift the pasta out of the water using tongs or a large strainer spoon, and ladle directly into warm bowls. This method keeps a little bit of the pasta water with the noodles, ensuring a hot and smooth sauce.
