Made double the glaze. Used half for recipe. Served with stir-fried snap peas + 2-3 Tbs. glaze, and balance of glaze at the table as sauce. Got rave reviews.5 Stars

Re:Grilled Chicken with Apricot-Balsamic Glaze

I brined bone in chicken breasts, then grilled and glazed them. I used peach preserves as I was serving a peach salad with the dish. I doubled the glaze and reserved half to serve aside the chicken. Next time I will try white balsamic vinegar as the remaining glaze looked muddy. A big hit with my husband and guests.

Very easy, great to make ahead. I've served with grilled herbed bread, and in a pinch Triscuit.

Re:Hot Italian Sausage with Fresh-Corn Polenta

I did make a half recipe of the polenta and it was more than enough for 4 people, with not much left over. Also grilled the (sweet) sausages. My husband was still raving about dinner long after we'd finished, and picky daughter liked it, too. The fresh corn makes the dish.
