I have to admit I posted this recipe prior to making it. However, I have since tested it and it is delicious. I recommend using the water bath method of baking described in Rose Levy Berenbaum's Pumpkin Cheesecake with Pecan Graham Cracker Crust published in Fine Cooking 35, p.68. I have never, ever had a cracked cheesecake using this method and the fillings are always beautifully creamy and rich-feeling in the mouth. Dulce de leche not being available in my grocery store, I made my own in the microwave using sweetened condensed milk. Worked great.
