Re:Maple-Glazed Roast Chicken

I too thought 2 C of real maple syrup for a brine was expensive, esp for a "regular" meal (non-holiday, non-company). What I am going to try is a regular brine and just make the glaze, but only 1/4 of it.

Re:Roasted Cornish Game Hens with Cranberry-Port Sauce

A delicious and very special dish. Splitting and cutting the hens is somewhat time consuming but the rest of the recipe is simple. Do not skip the day of drying in the refrigerator as it really does help the skin brown and crispen beautifully. The sauce is excellent. I tripled the sauce for leftovers and am glad I did.

Re:Baked Ham with Cherry-Pomegranate Glaze & Pan Sauce

I adapted this recipe with a fully cooked ham. I "cooked" the ham in a crock pot with the pomegranate juice broth as per the recipe, then used that broth in the sauce. I did not using all of the pomegranate broth in the sauce because I thought it would make it too thin, but with that exception, I followed the recipe and it worked perfectly. Both sauce and ham were delicious. I would definitely make this recipe again.
