I would give this 5 stars with the following change. Microwave the potatoes using the automatic potato setting. If you don't have the auto setting, microwave until tender, the time depending on your microwave power. Continue with recipe.

Re:Braised Chicken Legs with Red Wine, Tomato, Anchovies & Rosemary

This is a go-to recipe for me. I use rosemary and Roma tomatoes from our garden, when I have them, or canned wedges when I don't. The diced ones would break up too much in the braising. I use anchovy paste and only add about a teaspoon of vinegar at the end. I serve this with a green salad and the Roasted Polenta from this recipe.

Re:Pan-Seared Chicken Thighs with Beer and Grainy Mustard Sauce

I don't understand the "bitter sauce" reviews. I only had Michelob "Ultra" beer and I used Grey Poupon mustard and pure maple syrup. My husband and I thought it was delicious and so easy. I served it with braised cabbage and baked sweet potatoes, which went well with the sauce.

Re:Roasted Rosemary Butternut Squash & Shallots

My 16 year old grandson declared this AWESOME and was disappointed that there wasn't more. 3 cups just doesn't feed 4 people. I did 5 cups for 5 and I could have used 7 to 8 cups. I am doing 3 cups for 2 of us tonight.
