I can't help mentioning a little wok propaganda: the best wok for stir-frying is the one Fine Cooking is giving away: a 14-inch flat-bottom carbon-steel wok. Like a cast-iron skillet the more you cook with it the pan forms a natural nonstick surface, meaning it requires minimal fat for stir-frying. And the flat-bottom is perfect for an electric, induction or a gas stove top. I also prefer it because the food sears and caramelizes much better than nonstick cookware.
