YEA - getting back in the kitchen after abruptly stopping cooking three years ago. Feels sooooo good to choose to open my heart with baking & cooking.

After six yrs in the corporate world as a CPA (Arthur Andersen), I started a catering business without knowing how to cook; this was in 1988. Ten years ago I closed my catering business after 15 yrs of successful operating in the corporate arena.

Three yrs ago I started a national non-profit dedicated to bringing sustainable best operating practices to the corporate community. This fall the National Restaurant Association purchased our prominent program, the Zero Waste Zones.

I am proud to say my dining room has a 20 qt Hobart mixer and my office a professional half-convection oven along with a freezer. My heart sings when in the kitchen preparing food to share with friends & colleagues. The last three years were intense, challenging, amazing and successful - my heart is ready to sing in the kitchen once again.

Re:Maple-Glazed Roast Chicken

The chicken itself is excellent: tender, juicy and with lovely flavor from the maple brine. My frustration is the temperature is too low to get the delicious skin I love on roasted chicken. Both times I made the recipe it never caramelized like the picture. Tonight I am making the recipe a third time and will use temperatures from other culinary sources.
