Re:Farfalle with Golden Beets, Beet Greens, and Prosciutto

I roasted the beets the night before thinking that I was going to make a beet and chevre salad, but decided to that I wanted to also use the greens in the same recipe because they were so fresh. Since the beets were already cooked, this expedited the dish significantly. I agree with the first reviewer that the dish could use some crunch (particularly since my beets were pre-roasted) - pine nuts would be nice as suggested or perhaps toasted walnuts. I am avoiding pasta, and this was a great side dish minus the farfalle.

Re:Smoked Salmon Deviled Eggs

Who would want deviled eggs any other way after having them with smoked salmon. This is an incredibly easy way to put the festive back into eggs!

Re:Braised Pacific Halibut with Leeks, Mushrooms, and Clams

I created this dish with littleneck clams only and a mixture of mushrooms because they were what I had in the pantry. I served it over linguine and it was delish. I cut the butter in half and that was plenty to give the broth a sublime richness. Plus, did not feel as guilty slurping it up!

Re:Open-Face Smoked Salmon and Avocado Sandwiches

I disagree with the first review. There is nothing bland abut this dish -- the orange zest oil preparation with the toasted coriander is unexpected and very yummy. And, you definitely cannnot skip rubbing the toasted bread with garlic, because you need that with the avo topping. I did this as an appetizer for a book club and everyone loved it. A must try!
