Re:Fiesta Quinoa Salad with Grilled Shrimp

Save for some healthy olive oil this salad is virtually fat free and the nutty flavor of quinoa, sweet grilled corn, fresh veggies, and black beans make a delicious combination. We served the salad at room temperature, and then had it cold the next day - both were healthy, tasty, and satisfying. Truth be told, the salad would have been fine on its own, the shrimp are just a succulent bonus.

Re:Braised Duck Legs with Figs, Star Anise, and Winter Squash

Absolutely a delicious preparation for duck legs - company worthy. But I question adding the squash when the recipe directed. My squash came out way overcooked. Next time I will add the squash later or perhaps roast it basting it with some of the pan juices.

Re:Cane Vinegar Chicken Stew with Pearl Onions, Oranges, and Spinach

This is a very good chicken dish. If you are lucky enough to have leftovers it warms up well the next day too. I followed the suggestion to serve over mashed potatoes but you could also serve the dish over rice. Even though I blanched the pearl onions, as suggested, I say leave yourself a few extra minutes to get them out of their jackets. And I have to ask Chef Acheson - where in the world does one find cane vinegar? C'mon man! - I substituted malt vinegar.

Re:Honey-Glazed Chicken, Sweet Potato, and Peach Skewers

This is a sensational dish especially in summer when fresh, local peaches are in the markets. I prepared everything as directed and it all worked. Be careful not to over-steam the potatoes - they continue to cook a little when removed from the heat. Using two skewers instead of one prevents the ingredients from spinning when turning them on the grill. Definitely company-worthy.

This is a sensational cake. It's not too sweet, has a nice moist crumb and is especially good in early summer when local, fresh raspberries are available. It is truly a crowd-pleaser.
