Fast and tasty! I prefer this to take out any day. Preparing this recipe only takes about as long as a pot of rice does to cook. Just have everything prepped before you start the stir fry.

Re:Pickled Cauliflower with Carrots & Red Bell Pepper

When making this recipe, I was afraid the Indian spices would take over, but it turned out great! All the veggies were from my garden and it was a great way to "put up" my summer bounty. I chose to process these pickles so I could keep them throughout the year. Processing for only 5 minutes yields a perfect crunch. We had the first pint of pickles the other night and everything from the onions, garlic, and sticks of ginger were polished off.

Re:Beef Stroganoff with Cremini & Porcini Mushrooms

Fast and easy. I made a couple changes to use what I had on hand. Instead of beef broth, I used 1 cup chicken stock and 1/2 c red wine. I didn't use the dried mushrooms but more fresh creminis. Sirloin was on sale at the grocery store and substituted nicely for the tenderloin. Even without the dried porcini, the method of layering flavors in this recipe creates a very satisfying dish.

Re:Classic Macaroni & Cheese

I follow this recipe exactly. Cut corners or leave out ingredients and it just isn't as good. I like using Tillamook sharp cheddar. A medium cheddar doesn't pack enough cheese punch. My family requests this dish more than any other. It is a truly superior Mac & Cheese!
