Re:Grilled Lamb, Tomato, and Halloumi Skewers with Orzo Salad

Quick, easy, delicious! I had some leftover halloumi and saw this recipe. Halloumi is a bit salty but it really worked with the lamb and the orzo salad. My husband and I thoroughly enjoyed the leftovers too.

Re:Lemon Meringue Pie

I made this to take to a brunch yesterday. Everyone loved it. My husband is not a fan of meringue but he said that the meringue topping was wonderful. It was light and not so candy-like as other meringues. I will definitely make the pie crust again. Light, flaky and delicious. I'm giving this 4 stars out of 5 because I was underwhelmed by the filling. It just wasn't lemony enough and there was something about the texture that I didn't love. Still a great pie and with more lemon, it would soar.

Re:Thai-Style Spicy Chicken in Lettuce Cups

Very tasty, easy week-night dish. I thought that all of the flavors melded perfectly. I made the rice, added it as a thickener, but forgot to add it at the end. I didn't really miss it. As a side, I made a green bean salad with an Asian vinaigrette. It went really well with the addition of some jasmine rice.

Re:Double Chocolate Chunk Fudge Brownies

So easy to make and very fudgy. I even accidentally poured in the flour before the sugar and it still turned out great!
