Fantastic! You've confirmed my suspicions- we only had unsalted butter on hand this year and added salt to make up for it- didn't even think about water-oil ratio! We usually use a wooden spoon but I wasn't aware that using a metal one would effect the candy.

Our toffee breaks (when it does) right after adding the almonds. I'll have to experiment with putting them right on the marble slab and pouring the mixture over.
