Lighter then your standard restaurant Cobb Salad. I did cut the amount of mint in half, which suits my familys' taste. This is is lovely summer salad.

This is a winner! Don't skip the pepitas, the crunch and toasty flavor add great flavor and texture. We sometimes will include shredded chicken for the meat lovers in our home.

Absolutely delicious one pot meal. Since I live in a small town in ND, fennel wasn't available. I substituded green cabbage and used the chicken/spinach sausage in my frig. This was a huge family hit on a very cold winter night.

Re:Quick Chicken Chili

This soup is a little strong on the cumin side for us. Next time I will try cutting the cumin to 1 Tbsp and substitute a jar of fire roasted salsa verdi for the diced chilies.
