Re:Asparagus and Pea Shoots with Pistachios and Soft-Cooked Eggs

I overcooked the eggs just a bit and substituted sunflower sprouts since I couldn't find pea shoots. Yet, it still turned out fantastic. Such great flavors, a wide variety of textures. It feels like something a high end restaurant would serve.

So quick and easy! Pesto goes great with eggs. If you love pesto, you'll enjoy this. I tried it both ways and really like it better with hot sauce.

I needed a side to go with a new pressure cooker Indian dish I was making. This was so delicious!! Not a bit remained. I didn't have a spice grinder, so I used a mortar and pestle.

This is an easy and quick main dish to make, and it just looks beautiful on top when it's done! I've made the dish multiple times and it usually takes 35 minutes to cook the chicken to 165 degrees, NOT 20 minutes.

This was the hit of my Christmas dinner and my first time making any type of stuffing! I was worried I had toasted the bread too long and then the dish too long, but this recipe is quite forgiving. I also used white mushrooms and pecans due to easy availability. This is an excellent way to dress up your turkey dinner.

Re:Tortellini with Artichokes, Roasted Peppers & Olives

This dish was better than I'd expected and much heartier, too! I cooked it with whole wheat tortellini, and everyone loved it. Even the pickiest eater said I should make it again. I love how most of the ingredients I could keep on hand to make at any time. Fairly quick prep, too. This will be a great dish to serve when meal planning for a vegetarian eater.
